This Festive Bikini – A Recipe

We present a home-style interpretation of a cocktail found on the seasonal cocktail list. It's a batch pre-mixed that is bursting full of flavours associated with holiday season, making it ideal for a holiday party. Reserve the remaining citrus syrup you can use for morning drinks, sweets, or to mix more rounds of the drink.

Bikini Recipe

Serves 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Cocktail (yields 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Combine every components inside a pot, heat until it reaches a simmer, stirring to dissolve. Next, turn off the heat allowing it to cool entirely. Pour into an sterilised bottle, seal keeping it in the refrigerator, where it will keep for around four weeks.

For the Cocktail Base: Mix all the liquids into one big jug, allow it to infuse for an hour, then strain , ideally through a fine cloth, so it's fully clarified.

To serve: Add 85ml from the batch mix to a mixing glass packed with ice, and agitate gently for one minute until cold. Pour into a frosted cocktail glass or a similar vessel, top with the cranberries and finish with a quick spritz of mandarin oil over the drink.
